Mark’s business grew out of Adelaide’s Central Market which is located in the heart of the CBD and is the epicentre of food, culture and lifestyle for many South Australians.  It is the largest fresh produce market in the Southern Hemisphere, with over 80 specialist stalls.

Mark Gleeson’s 'The Providore' is one of those stalls and with over 25 years experience in the hospitality industry, Mark’s knowledge of South Australian quality food is second to none.  Mark’s passion and experience are in high quality gourmet produce.  Through The Providore and award-winning Grange Jetty Kiosk Restaurant, both of which he co-owns, Mark uses his vast knowledge of South Australia’s produce to expose locals and travellers to the finest food and wine that the State has to offer.  Mark judges Regional and National Olive Oil awards, is a budding cheese sensory analyst and speaks regularly on local radio about food, the market, the produce and the people who use the market.
